After delivery to the winery, the grapes were processed gently. After pressing, the new wine was settled and the free-run wine was racked into second-fill and used 225-litre barrels. Malolactic fermentation was also completed during the process. Fermentation took place in open tank with manual punch-downs at low temperature, 22–23°C, over four weeks. Ageing lasted for 15 months. The wine was bottled unfiltered.
