Harvest began when the grapes were fully phenolically ripe and had brown seeds. After several selections, only healthy fruit could enter the harvest crates.After delivery to the winery, the grapes were processed gently. After pressing, the new wine was settled and the free-run wine was racked into barrel. Malolactic fermentation was also completed during the process. Fermentation took place in open tank with manual punch-downs at low temperature, 22–23°C, over five weeks. Ageing took place in new and used barriques for 25 months.
