It is more for food than for casual conversation, though of course we will not prescribe that. Half of the wine was made in tank and half in used 500-litre French barrels, after which the two worlds met. The grapes ripened slowly but surely by mid-September. Perhaps it really is the terroir. At the same time, a smaller lot was already fermenting and maturing in barrel — new 500-litre French oak — where it rested until the next harvest; it was then blended and bottled. It fermented spontaneously for two weeks on skins in an open vat, then finished fermentation in tank after pressing. Not loud, but not shy either. After harvest, the grapes were processed quickly and fermented in tank at low temperature. This year we got ahead of the starlings and picked in early September. These three grapes are where the estate began. The wine did not see barrel.
